GG's potato rolls

This is the potato roll recipe I grew up eating...the one my Great Grandmother made forever before she passed.  :)

1 1/2 c warm water
2/3c sugar
2/3c shortening
1c lukewarm mashed potatoes
1 pkg yeast
1 1/2 tsp salt
2 eggs
7-7 1/2 c flour

Dissolve yeast in warm water.  Let set until foamy, 5-10 minutes.
Mix in sugar, shortening, mashed potatoes, eggs and salt.  Add in 3 cups of flour and then using your dough hook, add in as much of the rest of the flour as you can, until a stiff dough forms.  I usually end up using between 6 1/2 to 7 1/2 cups depending on weather and such.
Place in greased bowl, cover and let rise until double. about 1 - 1 1/2 hours.
Punch down, repeat rising process.
Roll into golf ball sized ball, place 12 in greased 9x13.
Bake at 375 until golden.
