Bacon and Broccoli Quiche

We had this for dinner tonight with a green salad and some warm homemade rolls fresh out of the oven. It was so good, and it was a nice change of pace to not have a plate full of meat, granted it does have some bacon in it, there really isn't that much, and you could easily omit the bacon or substitute it with a vegetarian version.


Ingredients:
1/2 package of bacon
1 small onion, diced
1 cup broccoli, diced
1 1/2 cups cheddar
4 eggs
3/4 cup heavy cream
3/4 cup milk
1 tablespoon butter
salt and pepper to taste
pie crust

Directions:
Preheat over to 350.
Fry bacon. Remove to paper towel lined plate to drain.
In the grease, saute the onions and broccoli that has been chopped to bite sized pieces until semi-soft, about 3 minutes.
Combine bacon and broccoli mixture and put into bottom of pie crust.
Top with cheese and then egg mixture.
Bake for 30 minutes or until the center is set up.
