Pancakes


I've always been on the search for a recipe for pancakes that was fluffy. It seems like pancakes are always flat and just chewy. Well, my search has come to an end. I finally found a decent recipe on allrecipes.com, and after a bit of tweaking, have perfected it to our liking. We normally add mini chocolate chips to the batter, but you could add all sorts of things- chocolate chips, blueberrys, bananas- possibilities are endless.

Ingredients:
1 1/2 cups milk
4 tablespoons white vinegar
2 cups flour
2 teaspoons baking powder
1 teasppon salt
1 teaspoon baking soda
1/4 cup sugar
4 tablespoons butter melted
1 teaspoon vanilla
2 eggs

Directions:
Combine the milk and vinegar, set aside to thicken up while you prepare the other ingredients.
Combine all the rest of the dry ingredients: flour, baking powder and soda, salt and sugar.
In another bowl, mix the eggs, butter and vanilla.
Add the wet ingredients to the dry, and stir just to combine. Batter will be lumpy.
Cook away!
