Anyways, for this Saturday's sweet eat,I made a pie per Louis' request. We recently went on a date night to our favorite local Italian place and on the menu was peanut butter pie. We ended up NOT having it that night, but it has been on his mind ever since. When we found out it was time to figure out what I was going to fatten our bellies with tonight, it was long until until peanut butter pie rolled off his tongue.
I'm not a huge peanut butter fan (gasp), but realize I'm the exception to the rule, especially in my house, so with everyone all for it, it was a given.
I chose to make a similar version to the Kevin and Amanda version, with an oreo crust and a chocolate ganache top....I mean if you're gonna do it...do it.. right?? :)
Plus, this pie literally takes like 5-6 ingredients and about 15 minutes together. Not too shabby.
Ingredients:
1 package Oreos, just regular ole' oreos
2 sticks unsalted butter, softened
1 1/2 cups SMOOTH peanut butter
2 tbsp SMOOTH peanut butter
1 1/4 cup powdered sugar
1 tsp vanilla
1 cup chocolate chips, i like milk chocolate, but you could use dark, semi sweet or whatever
1/2 cup heavy whipping cream
Directions:
Pulse the whole package of oreos to a fine crumb in food processor. You could also use a rolling pin and ziploc.
Mix together one stick of melted butter and the oreo crumbs together in bowl.
Press in bottom and up sides of pie plate
Freeze for about 10 minutes while you prepare the peanut butter mixture.
In stand mixer, or large bowl with hand mixer, combine peanut butter, 1 stick unsalted butter, softened, vanilla and powdered sugar.
Mix until well combined and light and fluffy.
Spoon into oreo crust. Place back in freezer while you prepare ganache.
In a small glass bowl combine chocolate chips and remaining 2 tbsp peanut butter.
Bring cream to simmer in sauce pan. Pour over chocolate chips and peanut butter mixture. Let sit for five minutes, covered, and then whisk until smooth.
Pour over pie. Refrigerate for at least one hour or freeze for about 20-30 minutes
